Don’t Forget Your Top: don’t forget when purchasing vegetables with green tops, that those tops are edible and delicious. Most people know that they can cook the leafy tops of beets, and that the tops of our onions can be chopped and used as scallions in cooking or raw over a salad. Did you also know that carrot tops are tasty and nutritious in soups and sauces? Radish greens can be used like arugula. Sweet potato greens are sweet, crunchy and tangy when cooked. So next time you pick up a bunch of fresh root vegetables with the tops intact, explore your inner bunny and nibble on the tops of the garden!
