We’ve got beautiful sweet green zucchinis and round yellow summer squashes! Big beautiful bunches of tender, dark green Ethiopian kale plus two other kinds of kale. Dandelion greens. We’ve also got wild gherkins – these are pasture cucumbers, spiny but delicious as a quick (or slower) pickle. Quick pickle recipe below.

Salads are back! Come early and dig into the farmstand coolers: we’ll have sweet salad mix, baby spicy mix, baby arugula, and green oak leaf lettuce heads.

Early birds may spot one or two pints of our yellow super sweet cherry tomatoes, passionfruits, and fresh figs. (Late birds will still get Ethiopian kale and zucchini!)

Freshly early-this-morning-harvested herbs: thyme, Thai basil, Italian basil, holy basil, lemongrass, garlic chives, recao. Some green (red hot) chili peppers.

Say hi to Santa at the Christmas Boat Parade tonight, and tell him we’ve been really really good at the ARTfarm and we want a pony. No, make that lots and lots more rain.

Farmer Luca’s Wild & Quick Pickle Recipe*

Eating these weedy little cucumbers is a bit like those early childhood experiments where you’d find something outdoors and decide to “make a snack”. Sometimes when we are working in the pastures and run out of water to drink, these juicy little bite-sized cucurbits are just the thing! Nature’s little oasis. This quick pickle is delicious served as a crunchy little side anywhere you’d want a bit of relish.

3 c. tiny wild pasture cucumbers, cut in half
1/2 c. water
1/4 c. vinegar
1 tablespoon salt
1 tablespoon unrefined sugar (muscovado or coconut sugar)
1 teaspoon cumin seed
1/8 c. chopped fresh herbs; tarragon, or whatever is handy, to taste

Briefly dry roast the cumin seed in a saucepan. Add the liquids, sugar and salt and bring to a simmer.

Toss the cucumbers, onion and fresh herbs in a bowl and pack loosely into canning jars.

Pour hot liquid over chopped cucumber mixture to cover. Allow it to sit until just warm, then cover. Eat as soon as cool and/or refrigerate.

Will settle in flavor and taste even better the next day.

*This is a rough, down and dirty farmer recipe, the percentage of all ingredients can be increased or decreased to taste

ARTfarm Saturday: 10am Treats!

Luca’s and Mike’s art exhibition is closing today (Saturday), with the last viewing from 11 AM – 2 PM. So after you pick up your fresh veggies, head over to Peters Rest if you haven’t had a chance to see this inventive collection of new watercolors and abstract sculptures from these two men of industry. Admission is free.

Organically grown just for you, with stored rainwater that is a mere memory of beautiful darkened skies that passed over us at least three or four months ago: Sweet salad mix, bunched arugula, radishes, beets, a few tomatoes and cherry tomatoes, a few cucumbers, Italian basil, green coriander, fresh onions, scallions, pineapples, and raw honey from Errol.

ARTfarm Wednesday, 3–6 p.m.! Get a Taste!

It is really Taste week on St. Croix! We had a brief visit from visiting celebrity Chef Sam Choy early this week when he came out to ARTfarm to pick up some ingredients for a charity dinner. We enjoyed talking to him about growing techniques in Kona, Hawaii, where he is a leader in the farm-to-table movement.

For today’s midweek farmstand we have on offer: Sweet salad mix, baby arugula, baby spicy salad mix, a few bags of microgreens; scallions and Italian basil; onions, beets, carrots and radishes with beautiful green tops for cooking or juicing; cucumbers, and diminishing numbers of end-of-season cherry tomatoes, small heirloom and slicer tomatoes.

If you need some fresh ideas of what you can do with your ARTfarm produce, we will be hosting a table at the Taste tomorrow night! Chef/restauranteur Joe Smith and his partner and lovely wife, Jen Valiulis are owners of Garden Table Market in Salem, Indiana, and both have been longtime residents of St. Croix and employee farmers at ARTfarm. Joe and Jen will be our chefs tomorrow night, representing us with several delectable dishes using a lot of ingredients straight from ARTfarm and a few other local farms and producers, including Dr. Bethany Bradford’s Fiddlewood Farm local goat cheese! Come see us at booth #4 on the west end pier of the event if you are fortunate enough to have tickets to this great charity event.

Happy Saturday everyone! We are open regular hours today, 10 AM – 12 noon. Today’s harvest: Lots of salad greens! Sweet salad mix, lots of microgreens, arugula, teen arugula, spicy salad mix, cucumbers, onions, beets, carrots, watermelon radishes, the beginning of the end of the cherry tomatoes, medium sized tomatoes, a few pounds of baby sweet potatoes, radicchio, escarole, dandelion greens, sweet potato greens, ginger, Serrano chili peppers, Italian basil, Thai basil, cilantro, parsley, thyme,  zinnia flowers, and from our partners:  limes and sour oranges from Spring Gut Gardens, and I-Sha’s vegan fruit ice creams to cool you down during these hot, dry days before the rainy season.

Last night was the opening reception for “Men Of Industry”, a new art collection from Mike Walsh and Luca Gasperi at Walsh Metal Works Gallery here in St. Croix. So many of our wonderful farmstand customers and fellow artists came out to support Luca and Mike’s creative efforts, and we appreciate all of you who were able to make it last night! It was really packed!
